And if there’s a third thing, it’s easy and healthy meals with minimal clean up. This Fall Harvest Chicken Tortilla Soup recipe checks off all the boxes! The ingredients are easy to keep on hand and you just throw them all in the slow cooker!
Trader Joe’s Fall Chicken Tortilla Soup
What makes this Chicken Tortilla Soup special? Definitely the 2020 Fall Trader Joe’s products! In lieu of just regular salsa, I swapped Trader Joe’s Fall Harvest Salsa. It’s a sweet combination of harvest vegetables with a spicy salsa kick. And instead of strips of tortillas, I COULD NOT pass up the adorable Fall Leaf Trader Joe’s Corn Chips!
My Trader Joe’s Fall Chicken Tortilla Soup recipe is also dairy free! It’s a great postpartum recipe when you’re short on time (and hands) but need something healthy and filling! Reheats easy for quick lunches. I know all this from experience 😉

Ingredients
1 lb chicken (breast or thigh)
1 jar Trader Joe’s Fall Harvest Salsa
1 can black beans, drained & rinsed
32 oz chicken stock
1 tsp each salt, pepper, cumin, chili powder
1 bag Trader Joe’s Fall Leaf Corn Chips
Directions
- Place chicken in slow cooker and cover with half of the salsa. Cook on low 6-8 hours until chicken easily shreds.
- Shred chicken. I love when I get to pull out the bear claws!
- Add remaining salsa, chicken stock, black beans and spices. Stir to combine.
- Cook an additional 30 minutes on low or until warmed through.
- Serve with lots of adorable leaf chips!
- Top with sour cream, cheese, cilantro, avocado – whatever you like!
